About Mita Mita is a Michelin-recognized fine dining restaurant rooted in Latin American culinary tradition, located in Shaw, Washington DC. Chef-driven and detail-obsessed, we offer an intimate tasting menu experience where every element of the guest journey is considered. We are building a beverage program to match the ambition of our kitchen — one that reflects the depth, terroir, and storytelling of Latin American wine and beyond.

The Role Mita is seeking an experienced, passionate Sommelier to lead and grow our wine and beverage program. This is a guest-facing role that combines deep wine knowledge with and a genuine love of hospitality. You will work closely with ownership and the kitchen team to develop a program that is cohesive, creative, and commercially sound.

Responsibilities

• Curate and manage Mita's wine list with a focus on Latin American producers alongside complementary Old and New World selections
• Source wines directly from importers and distributors; develop meaningful supplier relationships
• Maintain and grow the cellar, including inventory management, par levels, and cost controls
• Design wine pairings for tasting menus and a la carte offerings in collaboration with the chef team
• Lead tableside wine service with confidence, warmth, and genuine storytelling
• Educate guests on the story behind each selection — the producer, the region, the vintage
• Train and develop FOH staff on wine service, beverage fundamentals, and upselling
• Conduct regular wine education sessions and staff tastings

Qualifications

• 1+ years of sommelier or beverage leadership experience in a fine dining or Michelin-recognized environment preferred.
• Formal wine certification preferred 
• Experience building and managing a cellar, including inventory and cost tracking
• Strong tableside service skills and genuine passion for hospitality
• Collaborative, low-ego team player who thrives in a chef-driven environment
• Bilingual English/Spanish a plus
